The SAJ is an old and prominent tradition in the villages of Lebanon. It is a curved metallic sheet on which the Lebanese bread, we call Markouk, is heated and cooked. The bread is almost as thin as a sheet of paper. The word “Markouk” literally means "thinned", it is also the lightest of breads. Many models of the SAJ exist, the professional kind, mostly electric, or the traditional fire-heated kind.
